Arriving in early 2026, Union Chicken will bring its iconic buttermilk fried chicken to Waterworks. Centered on premium, ethically sourced poultry, Union Chicken will serve elevated takes on nostalgic comfort food, including fan favourites such as the crispy O.G. Fried Chicken Sandwich, Triple-Cooked Fries and Chicken & Waffles that have made it one of Toronto’s go-to destinations for refined Southern-inspired cooking.

Located in a meticulously restored and repurposed heritage building, Waterworks Food Hall is home to over 15 culinary artisans, three bars, including Grape Witches and Civil Works, six event spaces totalling over 12,000 square feet, and two outdoor patios, including a secret courtyard garden. The former City of Toronto machine shop was redeveloped by Woodcliffe Landmark Properties and MOD Developments, and meticulously restored by a deep bench of architectural and design talent, including Diamond Schmitt Architects, ERA Architects, Steven Fong Architect, DesignAgency, Cecconi Simone, and Futurestudio.
