COQUITLAM, British Columbia — Milestones, the renowned restaurant banner that first opened in Vancouver in 1989, returns to its birthplace with a major investment, and milestone. On September 4, the banner opened its first Milestones Test Kitchen and an intimate, prohibition era-style cocktail bar, Fraser Bar, named in honour of the restaurant’s deep roots in the Fraser Valley. The result of a partnership between Pacific Rose Hospitality Group and Foodtastic, the concepts represent firsts for Milestones and, if successful, will propel new menu options and the expansion of the Fraser Bar concept to other cities and locations across the country.

With a warm, eloquent and carefully appointed modern décor, Milestones Test Kitchen offers a menu that is equally split between best-selling Milestones favourites and new recipes meticulously chosen and prepared by the banner’s head chef, Jeff Dell. Classics include guest favourites like Portobello Mushroom Chicken, Chilli Chicken Bites and Wham-Bam Shrimp. Items unique to the test kitchen include Samosa Poutine, Lobster Frites and pizzas cooked in a wood-burning oven.

Located above the test kitchen, Fraser Bar offers guests the opportunity to step back and enjoy a cocktail and signature plates in an ambiance reminiscent of a roaring ‘20s and early ‘30s scene – a bar characterized by comfort, intimacy, high-touch service and fine spirits. Like the Milestone Test Kitchen, the Fraser Bar was inspired by the brand’s deep roots in the Fraser Valley.

“We’re proud of our Canadian roots and DNA,” says Peter Mammas, founder and president of Foodtastic, the company behind Milestones – and more than 20 other leading brands including Freshii, Pita Pit and Second Cup. “And while that’s true and important, I can tell you we’re just as proud of our people and our partners, like Pacific Rose Hospitality Group, who work tirelessly to serve our customers and live up to our values.
