She’s cracking.
Gov. Kathy Hochul sounded off Wednesday about the “outrageous” price of eggs — jokingly telling New Yorkers to make chocolate cake with applesauce instead.
The unprompted recipe suggestion came as Hochul, during a news conference in Midtown, slammed President Trump’s tariffs for driving up prices on everything from avocados to children’s toys.
“And I’m done talking about the price of eggs — just give up eating them,” she said, drawing laughter. “It’s just outrageous, outrageous.”
“You can make a really good chocolate cake with applesauce,” she added. “I digress, it’s also vegan.”
Her rant about tariffs came as Hochul, who is running for re-election in 2026, tried to position her massive $254 billion state budget deal as helping New Yorkers during an affordability crisis.
The approximately $3 billion in giveaways included in the budget — from up-to-$400 “inflation refund” checks to a child tax credit expansion — will save families of five roughly $5,000, she said.
The promised extra cash could arguably help New Yorkers deal with egg-flation, which brought prices of the staple above $6 on average nationally.
The Democrat has repeatedly slammed Trump over spiking prices, but got egg on her face after she claimed she couldn’t afford them for an annual Easter event — despite she and her husband raked in more than $1 million last year, The Post previously reported.
Her affordability pitch Wednesday was arguably overshadowed by her messy applesauce digression.
When a reporter pressed Hochul whether her comments were tone deaf, the governor got more a little scrambled — or saucy.
“I was just showing that you can make an alternative to using eggs,” she said. “Chocolate cake recipe which I am willing to share.
“It is not tone deaf.”
The Post reached out to at least seven vegan bakeries for their expert take on Hochul’s use of applesauce as an egg replacement in chocolate cake.
Nearly every bakery contacted said they use cornstarch instead of applesauce.
After the presser, the governor’s office offered another giveaway to New Yorkers: the applesauce chocolate cake recipe.
The egg-free recipe is as follows:
“1 box chocolate cake mix. Make as directed on the box, but sub out eggs for 1/4 cup applesauce per egg. So if it calls for 3 eggs then use 3/4 cups applesauce. Add the water and oil according to box instructions, except reduce each by 2 tablespoons. Bake according to box instructions.
“Icing: whip coconut fat with powdered sugar and chocolate powder until you have icing. There are coconut icings available at most grocery stores.
“It’s decadent. For the purists who want to make from scratch and not cheat with a mix, go for it.”
