Gwyneth Paltrow revealed on the “Today” show Wednesday that she substitutes milk with the leafy greens in her recipes — a comment that visibly baffled Savannah Guthrie.
“If you want to avoid dairy, one trick that I do is I dice up arugula and I put it in,” the Goop creator, 53, explained while making turkey meatballs for a cooking segment.
“Really?” Guthrie, 54, asked. “That’s weird.”
Acknowledging that the swap did “sound weird,” Paltrow claimed, “It kind of adds a nice texture to it, and it’s delicious.”
Guthrie gave the move the “OK” as the actress continued to cook.

Social media users had a heyday with the clip, with one quipping, “When I don’t have milk for my pancake mix, I just add lawn clippings.”
Another joked, “If my grandmother had wheels, she would be a bike!”
Others demanded Paltrow go “straight to jail,” while some sarcastically recommended “dirt” or “wood chips” for “texture.”
One fan, however, came to the Oscar winner’s defense in the comments section.
“It sounds odd but I think it’s out of context,” the Instagram user wrote. “Instead of adding grated parmigiano, you can absolutely add diced arugula. This will lighten the texture and add flavor and moisture.”
Paltrow has made headlines for her food takes in the past, with Meghan McCain accusing the “Marty Supreme” star of promoting a “starvation diet” in 2023.
The callout, notably, came after Paltrow divulged on “The Art of Being Well” podcast that she ate bone broth for lunch, did intermittent fasts and used IV drips.
The Golden Globe winner subsequently defended herself via Instagram Stories, insisting, “I eat full meals. I also have days where I eat whatever I want, French fries or whatever. My baseline has been to try to eat healthy.”
Last year, Paltrow admitted to having been “a little strict” with her eating in the past as she gushed over quitting the Paleo diet.
“I’m getting back into eating sourdough bread, cheese. … A little pasta,” she shared with “Goop Podcast” listeners in April 2025. “There I said it.”
